And to sweeten the deal even more, it’s all coming from one of the world’s few certified olive oil sommeliers (who, ahem, just celebrated her 21st harvest as Southern California’s first-ever EVOO producer). These bold flavors are great for adding complexity to marinades, pastas, and even cocktails. And if you’re looking for a super-simple salad dressing, Global Gardens founder Theo Stephan recommends mixing one tablespoon of fruit-infused balsamic with three tablespoons of extra-virgin olive oil—oh, and with a dash of pepper to taste.
