Porcelain is an unexpected but welcome (lighter!) twist on the traditional roaster. The black roasting dish has a textured surface and a matte finish, so it looks very similar to cast iron but weighs a lot less! The white roaster maintains the more traditional look of porcelain, with a smooth and glossy finish. They’re oven safe up to 572 degrees Fahrenheit so they perform similarly to your cast iron or ceramic roaster, too (just don’t use it on your stovetop!).
