The most important thing is to soak and rinse like you would beans if the bitter taste is not your thing.

Every time I make quinoa, no matter how many times I rinse it, I found it had a bitter aftertaste when prepared. I've tried white and red varieties bought from the health food store in bulk. Any advise?

Hi Barb, sorry the quinoa's been giving you trouble! In my experience, a really thorough rinse is all it takes -- you want to put it in a fine-mesh strainer and rinse until the water runs clear. It might help to run your hands through it as you rinse to make sure every grain gets rinsed. Failing that, I'm not sure -- I guess I would try a separate brand.

i was gonna suggest the same things as Remy did. Another possibility is that quinoa just isn't your thing. The bitterness you taste is the more its flavor letting you know that for you quinoa is quin-weird.

True, i forgot about that cuz i wasn't looking at the recipe. Glad to hear i am not the only one who loves them. Wonder if grilling the cakes would work, albeit once summer is here.

maybe you guys forgot about those Quinoa cakes with Salsa Fresca. i think they could make this list. i've made those a couple times for dinner and they are worth the effort. The One Pot Kale and Quinoa is a keeper, too. Anybody made the breakfast bars?

Rebecca -- I LOVE that recipe and wanted to include it, but we didn't, for now, since the ingredients for salsa fresca are (for most) out of season. Sad face. I plan on compensating by cooking a ton of it once summer comes around!
